Unless you have been living under a rock, you have definitely tried a variation of avocado toast- whether it be smashed avocado with chilli flakes on dark sourdough, sliced avocado on whole meal, mashed avocado on white baguette, avocado-bruschetta on organic rye, avocado with seeds on multigrain... well we want to share with you our personal favourite... the perfect balance of flavours in every mouthful...
...smashed avocado with tomato salsa on sourdough bread...
Ingredients (serves 2):
⁃ 2 avocados, ripe, part cubes part smashed
⁃ 1/2 lemon
⁃ Allio Olive Oil, to taste
⁃ Freshly cracked black pepper, to taste
⁃ Pink Himalayan sea salt, to taste
⁃ Fresh tomatoes / baby tomatoes, diced (250 g)
⁃ 1 spring onion, diced
⁃ A handful of parsley, diced
⁃ Fresh sourdough of rye bread
⁃ Begin by finely dicing spring onion, tomatoes and parsley
⁃ Then cut avocados in half, remove pip and scoop half into a bowl; smash the part in the bowl and cube the remaining
⁃ Slice medium-thick slices (2-4 slices) and add to toaster, to be golden
⁃ Add all ingredients to the bowl and mix together
⁃ Crack the black pepper and add sea salt onto the top, generously drizzle allio olive oil and squeeze lemon to taste..
⁃ Mix up and pile onto toasts using ice-cream scooper...
⁃ Now just relax and enjoy!
