olive oil cake for the soul

Olive oil can only be used for savoury cooking right? Surely no one uses it for desserts, let alone cake? If you feel this way, prepare to be amazed! If you feel like trying it out for yourself keep reading!

For halloween weekend, we featured this beautiful fig-walnut olive oil cake made by baker Inés Banović and couldn't resist to ask her for the recipe! Take a look:

Ingredients:

cake batter

200 g flour

50 g walnuts (25 g finely ground, 25 g larger pieces)

5 x eggs separated

220 g warm water

2 tsp baking powder

1/2 orange zest

1 tsp vanilla extract

pinch of salt

220 g icing sugar

70 g olive oil

2 x 18 cm tins

 

icing

250 g mascarpone cheese

200 ml cream

2 tbs fig-orange jam

icing sugar to taste

 

garnish

chocolate

whole figs (some halved)

whole walnutes

 

Method:

1. beat egg yolks with the sugar

2. whilst still mixing add water and olive oil

3. keep mixing and add flour and beaten egg whites, alternating ingredients

4. add salt, vanilla extract, baking powder and ground walnuts

4. pour batter in 2x 18 cm tins

5. bake for 25 - 30 mins on medium-high heat

6. after cooling, cut layers in two, to get 3 layers

7. spread jam between each layer

8. add the cream cheese frosting

9. garnish with chocolate, plain figs, and walnuts and maybe even an olive branch!
